Beginning of May

May went by very quickly and I didn't take a lot of photos, so I'll try to sum up the month in just a couple posts so that I can consider myself current on this blog! What an accomplishment that will be. :)

The first of May I was in charge of bringing "break" - a snack that our department shares during our break on Thursday mornings. Given that I am known for my cooking I am not allowed to just bring store bought cookies. I decided this time to make "magic puffs," which are marshmallows dipped in butter & cinnamon sugar inside of crescent rolls that are dipped in butter & cinnamon sugar with a powered sugar glaze. So very yummy!

Friday night I was at a birthday party for a friend - Marcus. Marcus is the son of my good friends Paul & Kirsten and my honorary nephew. He turned 9 this year.

Monday the 5th was Cinco de Mayo. Each year I host a Mexican dinner on that day. I had 25 students in for dinner that night. We fiesta-ed with chicken enchiladas, beef/bean enchiladas, chicken taquitos, chips & salsa, and my famous guacamole. It was a fun evening with delicious food. I couldn't have pulled it off without the amazing assistance on my dear friend Amanda who gave up her afternoon & evening to help me cook. What a wonderful gal!

On the 7th I went out with Amanda and our friend Andrea to celebrate Amanda's birthday. We went to Columbos for dinner and then had ice cream at Coldstone Creamery. It was my first trip to Coldstone and I must say that I really enjoyed it and I will likely return! :)
